Austrian Coffee Cake

As i was browsing through da Flavours Magazine, guess what....i found a unique recipe! Austrian Coffee Cake...yeah, i was tempted to bake this cake because of its unique name (Austrian?? that's something new for me) plus i've never bake a coffee cake before! Bake this cake if you are a coffee lover as you will definitely love its texture and it's very aromatic! Here's da recipe:-

  • 250g Butter
  • 250g Sugar (i'd cut it down to 200g)
  • 1 tsp Vanilla Essence
  • 4 Large Eggs (i'd used 5 Small Eggs)
  • 250g Self-Raising Flour
  • 3 tbsp Milk (i'd used low-fat milk)

Coffee Sauce

  • 2 tsp Instant Coffee Powder
  • 2 tbsp Brandy (optional) (i'd used rum)
  • 1 tbsp Brown Sugar
  • 250ml Warm Water

Fresh Cream Topping (i skip this as i don't have any whipping cream)

  • 340ml Whipping Cream
  • 1 tbsp Icing Sugar

  1. Pre-heat oven to 160 degC
  2. Cream butter, sugar and vanilla essence until light and fluffy
  3. Add da eggs one by one, mixing well in between additions.
  4. Add da flour and mix well on low speed
  5. Pour in da milk slowly and turn off the mixer once da batter is even and smooth
  6. Pour batter into a 20cm lined and greased baking tin
  7. Bake in pre-heated oven for 60 minutes, or until cooked. Unmould da cake onto a platter

To Make Coffee Sauce

  1. Combine all da ingredients and stir to dissolve da sugar
  2. Drizzle da coffee-and-brandy mixture all over da cake
  3. Da top of da cake will feel soggy to da touch but leave it to rest for a few minutes and da cake will soak up da cofee-and-brandy mixture

To Make Topping

  1. Whip da cream together with da icing sugar until soft peaks form
  2. Spread over da completely cooled cake
  3. Decorate with shaved white chocolate or roasted almonds. Refrigerate until ready to serve
